Make this cheeseball. Seriously.

Try this. Its dessert. It’s a cheeseball. It’s fantastic. This is the type of thing you bring to a friends house for a gathering or for Easter Brunch or make ahead for 1:30am trips to the fridge just for a quick sweet bite (or 30) that you will absolutely not regret.

It’s like a cheesecake wrapped in a hug of chocolate chips and sliced toasted almonds.

I served it with graham crackers. It’s perfect in all it’s buttery cream cheesy goodness. It would be fantastic with fresh strawberries too. The recipe can be viewed here or below:

Chocolate Chip Cheese Ball

Recipe By:Kim

“A sweet switch from the usual cheese ball. Serve with graham crackers or chocolate wafers.”

Ingredients

1 (8 ounce) package cream cheese, softened

1/2 cup butter, softened

3/4 cup confectioners’ sugar

2 tablespoons brown sugar

1/4 teaspoon vanilla extract

3/4 cup miniature semisweet chocolate chips

3/4 cup finely chopped pecans

Directions

In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners’ sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.

Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour.

Roll the cheese ball in finely chopped pecans before serving.

Blueberry Muffins

So I am not going to win an award for my food pictures. I do not spend time artfully posing food in such a way that each crumb is accounted for- just not going to happen. I usually snap a picture while a one year old is screaming at me while biting his older brother.

While scrolling through Pinterest you will see wonderfully posed foods with the perfect lighting, but are the recipes good? Who knows.

I only post recipes that have been reviewed over a thousand times on allrecipes.com and have at least a 4.5 star average review. So, when I tell you these muffins are fantastic… many people agree with me- 9k people have reviewed it and 19k people have made it according to allrecipes.com.

Meal Plan Sep10-16

I am really excited for this week! We are from California, so I am especially excited for Tuesday Night’s San Diego Fish Tacos. YUM! I am a little late publishing next weeks meals. I currently have the slow cooker beef stew going and it is making the whole house smell delicious and cozy. It is a a rainy, lazy Saturday here in Texas- stew is complementing the weather perfectly. I am off to the store to grab a loaf of bread to go with the stew, then I am going to make the grocery list for this upcoming week. I will post pictures in this most as the week goes on.

Sometime this week I am going to tackle this ridiculously popular brownie recipe by allrecipes.com user “Angie”

Morning Smoothie

Seriously yummy, quick, and perfect for a satisfying morning breakfast.

My kids love this smoothie and I love this smoothie, so it’s a win-win. Just pop it all into the blender and blend until smooth. I usually have to add a little extra milk for it to get to pouring consistency.

I was worried about the oats, but they blend in really nicely and the they make the smoothie deliciously filling.

The recipe pours about two tall glasses (as in picture).

Meal Plan: Sept 5-9th

Thursday Casserole Night: Chicken Noodle Casserole

This week is a little different because we are going to be out of town and binge eating at our favorite California restaurants. The week picks up on Wednesday and continues onto Sunday.

I did my best to add all of the recipes I will be using within the first couple months of planning to my favorites list. You can access the list here. Let me know in the comments if I am missing any!

I am really looking forward to tackling the “Eggplant parmesan” night on Friday! This doubles as a vegetarian night. I try to spread out different meats throughout the week; chicken night, beef night, fish night, vegetarian night. Some weeks it works, and others it doesn’t. Sometime this week I am also going to make my tried and true favorite Chocolate Chip Cookie Recipe.

Enjoy!
